Step 1
Firstly remove and clean the anchovies. Wash them in a bowl with plenty of water. Strain them using a strainer to remove excess water. Add the salt and place them in the refrigerator to rest for approximately 1 hour.

While they are resting in refrigerator they will absorb the salt, enhancing their deliciousness. Meanwhile, finely chop tomatoes ,lemon and onions into rings or half-moon shapes.

Begin by lining the bottom of a baking dish with onions, then arrange the anchovies. Repeat this layering until all the ingredients are used. Once the anchovies and onions are layered, place the tomatoes on top.

Finally add the chopped lemon, olive oil, salt, blackpepper and red pepper flakes. Bake with both the top and bottom heat on 30-35 minutes in an oven preheated to 200 degrees.

After be sure to cooked, leave only the top of the oven open to allow the anchoves’ tops to fry. It will be enough 5-10 minutes. (There are the benefits to control because every oven is not same.)
