How be made lentil soup;

  • Step 1

    First, pour 1.5 cups of red lentils into a sieve and wash them until the water runs clear. Place them in a bowl and add enough water to cover them.

    In a deep pot, add 3 tablespoons of olive oil and 1 tablespoon of butter, then melt them. Sauté 1 large diced onion in the melted fats.

    Add 1 tablespoon of flour to the sautéed onions and continue to sauté until it releases its aroma. Slice 1 carrot and 1 potato into large pieces and add them to the pot.

    Add 1 teaspoon of salt and black pepper, then drain the lentils that you've washed and soaked in plenty of water, and add them to the pot.

    Pour in 6 cups of boiling water.

    Then, partially cover the pot with a lid and cook for approximately 30-40 minutes, stirring occasionally, until the carrots and potatoes become tender.

    After cooking, use a blender to the soup until it reaches a smooth consistency. If you want it even smoother, you can strain it through a fine-mesh sieve after used blender.

    After doing this ,simmer for an additional 5 minutes and then turn off the heat.

    Heat 3 tablespoons of olive oil and 2 tablespoons of butter in a frying pan. Add 1 teaspoon of red pepper flakes, and after 2 minutes of heating, remove it from the heat.

    Pour the soup into serving bowls and drizzle the prepared oil mixture over the top. Enjoy your meal!
