Peel and dice 4 potatoes.

Then, chop 1 red onion into small pieces and mix with the potatoes.

Heat up plenty of liquid oil in a pan and fry the potatoes, stirring occasionally, until they turn golden brown.

Transfer the fried potatoes onto a plate lined with paper towels. Fry the remaining potatoes in the same manner.

Peel off the membrane of the liver, dice it, and place it in a sieve to drain the blood. Since the liver is not washed, this method of draining the blood is sufficient.

Put enough flour in a large plate, and coat the liver pieces with the flour, mixing them well.

Shake off the excess flour and fry the coated liver pieces in hot oil, stirring for 3 minutes.

Transfer the fried liver onto a plate lined with paper towels.

Put the liver in a large mixing bowl. Add the fried potatoes, chopped red onions, and finely chopped half a bunch of parsley.
