Finely chop one onion and sauté it with 3 tablespoons of olive oil.
Add 1 tablespoon of flour to the sautéed onions and continue to sauté until the flour loses its raw smell.
Then, add 1 tablespoon of tomato paste and continue to sauté until the tomato paste's aroma is released.
Slowly add 1 liter of water while continuously stirring.
Finally, add 1 tea cup of small noodles (eriste) and cook, stirring occasionally, until they are done.
Once it's cooked, remove from the heat and serve hot. You can garnish the soup with a bit of lemon juice and mint if you like. Enjoy your meal.
