Mumbar, also known as “mumbar dolması,” is another traditional Turkish dish that involves stuffing intestines, usually sheep intestines, with a flavorful mixture. It is a unique and hearty dish that is enjoyed in various regions of Turkey and the Middle East. Mumbar stuffed refers to the stuffed intestines themselves. Here’s recipe of mumbar stuffed;

Wash the cleaned large intestines several times with 4 liters of water, 2 tablespoons of vinegar, and 1 teaspoon of salt. Make sure the inside and outside are thoroughly cleaned.

Wash 2 cups of rice with plenty of water and drain excess water in a sieve.

Grate 2 peeled onions,2 tomatoes, and 4 cloves of garlic with the fine side of a grater.

Add soaked rice, 250 grams of ground beef, 2 desserts spoon of pepper paste, powdered red pepper, mint, cumin, salt, and black pepper to a bowl.

After stirring and mixing the filling for about 5-6 minutes, let it rest for a short while.

Fill the large intestines with the filling using a funnel or a zucchini corer, making sure that it is not too full or tight.

Wash the stuffed intestines again with plenty of water to prevent the filling from spilling out.

Place the intestines in a pot and add 5 cups of hot water, 1 teaspoon of salt, 2 tablespoons of butter, and 2 tablespoons of pepper paste. Cook for about 50 minutes, with the lid open for 35 minutes and closed for 15 minutes.

Then, continue cooking by placing it in a preheated oven at 200 degrees Celsius for 10 minutes.

You can use the cooking liquid as a sauce. Serve garnished with finely chopped parsley and cumin. Enjoy your meal.
