  • Step 1

    Dice the livers that have been cleaned of blood. Take the diced pieces and place them in a strainer, allowing any excess blood to drain.

    In a deep bowl, add 1 cup of flour and 2 tablespoons of cornflour. Season with 1 teaspoon of salt. Mix the livers well with the flour mixture. Don't forget to shake off any excess flour before frying.

    Heat 5 cups of olive oil without burning it. Fry the livers for about 2 minutes on each side. Use a strainer to drain off any excess oil.

    In a bowl, put 2 red onions diced into slices and add chopped ½ bunch of parsley. Then, season it with lemon juice, olive oil, sumac, and salt according to your taste. You can serve the sumac onion salad with fried potato chips or rice pilaf. Enjoy your meal!
