  • Step 1

    Peel the skin of 2 medium-sized potatoes and cut them in half. Dice 2 medium-sized carrots and 1 celery stalk into large pieces. Peel the skin off 100 grams of pearl onions and 4 cloves of garlic, keeping them whole aside.

    Heat 5 tablespoons of olive oil in a deep pot. Carefully place the lamb shanks in the pot.

    Cook each side for at least 3 minutes on high heat, then flip the meat with a meat fork.

    Add the pearl onions and garlic to the seared meat. Add the diced potatoes, carrots, and celery into the pot and toss them with the meat in its own fat and liquid.

    Transfer the browned meat, root vegetables, pearl onions, and garlic to an ovenproof dish.

    Pour 4 cups of hot water into the baking dish. Add 1 bay leaf, 1 sprig of rosemary, 1 teaspoon of black pepper, salt, and 1 tablespoon of butter to enhance the flavor and consistency of the meat's juice.

    Cover the baking dish tightly with greaseproof paper. Cook the lamb shanks in a preheated 190 degrees Celsius oven for about 60 minutes.

    Remove the greaseproof paper from the cooked lamb shanks. Drizzle the meat with its juice. Serve the lamb shanks, along with the vegetables, on individual plates garnished with finely chopped parsley. Share with your loved ones. Enjoy your meal.
