To prepare Laksa paste, place 2-3 dried red chilies, 2-3 fresh red chilies, 3 cloves of garlic, 3 shallots, 1 stalk of lemongrass, a 1-inch piece of ginger, 1-inch piece of galangal, 1 teaspoon ground coriander, 1 teaspoon ground cumin, 1 teaspoon ground turmeric, 2-3 candle nuts, and 1-2 tablespoons of vegetable oil in a food processor. Mix all the ingredients until you achieve a smooth paste, scraping down the sides of the processor bowl as needed.
